Handa somen noodles are characterized by their thickness and firmness. Handa somen noodles are made with a thickness of approximately 1.3 to 1.7 mm. Thickness alone makes them no different from udon or hiyamugi. However, Handa somen noodles retain the flavor of the wheat, bringing out its distinct sweetness. Their firmness creates a chewy texture and enhances the rich aroma when chewed. Handa somen noodles combine the firmness that hiyamugi lacks and the exquisite texture that udon lacks.
