■Product Features
1. A grater that captures the original spiciness of wasabi
The taste and aroma of real wasabi can vary greatly depending on the grating tool and method used.
The more finely you grate wasabi, the more allyl mustard oil, the component that gives it its spiciness and flavor, reacts with oxygen and is produced in greater quantities.
In order to bring out the original spicy flavor of wasabi, it is necessary to extract more of this component.
Shark skin is said to be the best for gratering real wasabi, and Haganezame is a grater that can bring out the finest grit, just like shark skin.
2. Developed by a long-established wasabi shop
Our company is an "Izu wasabi shop" founded in 1905.
Even after purchasing expensive "real wasabi," we often hear from customers that "when I grated it at home, it wasn't spicy at all" or "it had less flavor than I expected."
When we asked them in more detail, we found out that they were using metal or plastic graters found in homes to grate the wasabi by pressing it firmly against the surface, moving up and down in the same way as when grating daikon radish. This problem led to the development of this product.
3. A unique, innovative and functional design As you can see, the pattern on the etched surface (the grating surface) is lined with the word "wasabi."
Before settling on this shape, we tried hundreds of prototypes, including circles, triangles, squares, letters and patterns, sizes, and arrangements.
The result was that, strangely enough, the hiragana character for "wasabi" was the best, and I was very surprised, thinking, "So, wasabi is the character for wasabi after all!"
The grating surface is a square measuring approximately 75mm in length and width, which allows you to draw an ideal circle when grating real wasabi.
The thickness is 1mm stainless steel plate, taking into consideration elasticity and flexibility, to reduce pressure when pressing too hard when grating real wasabi.
