This radish grater is named after the bamboo blades, which resemble the teeth of an ogre. Bamboo has low thermal conductivity, so it doesn't generate heat when grating food, and because it can grate ingredients coarsely, moisture and dietary fiber are less likely to escape, resulting in fluffy, crunchy grated radish.
The main body is made from thick moso bamboo, split, shaved, and polished, making it durable and long-lasting, without breaking. Bamboo is a thin material that is flexible and gentle when woven into strips, but when shaved into its flesh, it becomes extremely hard and sturdy, making it ideal for graters. The carefully designed, sharp teeth are securely fitted and fixed, making it sturdy and safe for heavy use. When grating daikon radish with an oni oroshi, the sharp teeth dig into the radish, which can require a surprising amount of force, so the handle is designed to be easy to grip and allow for firm application of pressure. Additionally, because natural kitchen utensils do not like moisture, a hole has been drilled into the end of the handle so it can be easily hung.
