HAMAMELIS: Botanical origin: A member of the Hamamelidaceae family, witch hazel is a perennial shrub native to North America and Canada, growing wild in the dry forests of these regions. Now also cultivated in Europe, this "spider tree" boasts flexible, twisting branches up to five meters high, with long, matte-green leaves. In autumn, these give way to numerous small, bright yellow fleurs with elongated petals and a tea-like fragrance. Capsules also appear at this time, exploding at maturity to release two black seeds.
SARRASIN: Also known as "buckwheat", the plant takes its Latin name (Fagopyrum) from the resemblance of its seeds to the fruit of the beech tree (Fagus). It belongs to the Polygonaceae family and is considered a pseudocereal. This hardy annual plant thrives in poor, even acidic soils, making it ideally suited to organic cultivation. Buckwheat has small white to pink flowers in tight clusters, and slender, pointed-heart-shaped leaves on reddish stems. The fruit is the buckwheat seed, beige to grayish in color and trigonal in shape. For many years, buckwheat has been considered ideal for animal feed, thanks to its high protein content. It is also used in cooking, where depending on the country, the grain is used to make flour for pancakes or tea. Buckwheat's antioxidant activity is 2 to 12 times higher than that of most other cereals. Its protein content represents between 10 and 12% of its dry weight.
